i want to to store the the data received from my transducer in the eeprom. Now sholud i take a wait for about a minute before fetching each data or should it be continuous . moreover the user must be able to retrieve data. nowif i am continuously getting my data then my memory finishes up early so how can it be done...........

You dont need to wait for fetching your data, you can read data continuously.
You can interface more memory if you need to store large amount of data, you can also use SD-Card to store data.
